Ingredients for Homemade Salt Water Taffy

You will need the following ingredients for salt water taffy:

3 cups sugar
2 tablespoons cornstarch
2 cups light corn syrup
3/4 cup water
4 tablespoons butter or solid vegetable oil
1 tablespoon salt
2-4 teaspoons of your flavor of choice
2-4 drops of gel food coloring(s)

Instructions for Homemade Salt Water Taffy

Step 1:

First, mix cornstarch and sugar in a large pot or very large saucepan. You will need extra space in the pan for boil bubbling. Then, add the rest of the ingredients, except for flavoring and coloring. Stir over high heat and bring the mixture to a boil for 3 minutes. Be careful as the mixture will foam and quickly rise at first.

Step 2:

Turn down heat to medium or medium-high. Clip a candy thermometer to the side so that the probe end is submerged mid-way into the syrup. Continue to boil until the temperature reaches between 242°(high altitude) and 252° (sea level).

Step 3:

When the boiled syrup reaches the right temperature, remove from heat and pour out onto a greased pan or sheet on heat pads to cool. Use separate pans, if you wish, to make different colors and/or flavors. Stir in flavoring(s). Let cool until mixture is easy to handle. You can wear greased gloves to handle it slightly sooner. At this point, add gel colorings if you wish before you begin the pull process. Pull the mass apart and fold, then pull apart and fold again, over and over in a kneading-type fashion, until the candy is shiny, opaque, and difficult to pull apart.

Step 4:

Roll and cut into bite-size pieces. Enjoy! Wrap the extra in wax paper or store in airtight containers.

What Makes Taffy Town Unique?

Taffy Town uses a distinctive whipped process to craft our taffy. Unlike our competitors, we avoid pulling our taffy and instead include whipped meringue in our recipe for a softer, chewier piece of taffy that melts in your mouth instead of sticking to your teeth. We think changing the pulled taffy tradition has resulted in a better taffy, and we hope you agree.
